Almost a cheesecake.
I have this great recipe for something that looks like a cheesecake, but actually isn’t. It has a crunchy base, vanilla taste, and coffee/caramel topping. What more could you ask for?

Ingredients:
First layer:
- 2 cups crushed sweetened biscuits (the amount is up to you, really, depends on how crunchy you want it to be.)
- 1 stick butter (room temperature).
Second layer:
- 2 cups powdered milk.
- 1 cup plain yoghurt.
- 3/4 cup sugar.
- 1 teaspoon vanilla essence.
Third Layer:

- 1 Carmelle packet. (Picture above!)
- 2 teaspoons instant coffee. (Yes, this is the only way you could use it!)
- 1/3 cup water.
- 1 teaspoon vanilla essence (optional)
Directions:
- Cut room temperature butter into 6-8 squares and add them into the crushed biscuits in a bowl. Mix them (best by hand) till you can biscuits can hold into shape, and it will look like this:

- Press the biscuit/butter mix into a baking pan, and set it aside:

- Mix the powdered milk, yogurt, sugar, and vanilla essence till well blended, and then add to baking pan:

- Broil for 5 minutes approx. under low heat (around 150 C), till the mixture holds. Don’t let it go brown:

- Take the pan out of the oven, and prepare the caramel/coffee topping on the stove using a small pan on LOW HEAT: add in water, the carmelle packet, and instant coffee. You can add in some vanilla essence too. Stir till well blended, be careful not to burn it! Then, very quickly and carefully pour the topping to the baking pan on top of the prepared fake cheesecake.
- Wait for it to cool down before cutting.
